MATERIALS:

· Konjac Jelly Juice (if not available in your country, you can use any alkaline solution)

· Small amount of water

· Plastic Egg Container

· Liquids to test (e.g. lemon juice, soda, vinegar)

PROCEDURE:

1. Pour a small amount of each sample liquid in egg container. Take note of the color of the liquid.

2. Pour a very small amount of water in the liquid.

3. Finally, pour konjac jelly juice in each liquid. Observe if there are changes in color.

ƒeƒLƒXƒg ƒ{ƒbƒNƒX: SCIENCE CONCEPT
ƒeƒLƒXƒg ƒ{ƒbƒNƒX: The sample juices contains ANTHOCYNANIN and change the color into green when Konjac (which is an alkaline) juice were poured. The orange soda on the other hand, do not contain anthocyanin so therefore there is no change in color.
In cooking yakisoba noodle with a red cabbage, the noodles will become bluish and become pinkish when turmeric powder was added. Can you guess why?

Taking it further

1. Try cooking the red cabbage with different ingredients, see if they will change color just like yakisoba noodle did.

2. Find a good substitute for konjac juice in your community. Try extracting juice from another green leaves.

Konjac - it is a perennial plant grown in India, China, Japan and Korea for its large starchy corms, used to create a flour and jelly of the same name. It is also used as a vegan substitute for gelatin. (en.wikipedia.org)
