MATERIALS:

· Quarter of Red cabbage

· 1 tbsp Salt

· Medium size plastic bag

· Plastic Egg Container

· Liquids to test (e.g. lemon juice, soda, vinegar)

PROCEDURE:

1. Tear off leaves of the red cabbage into pieces.

2. Put the torn leaves in the plastic bag and add the salt. Tie the plastic bag.

3. Rub the plastic bag for about five minutes.

4. Take the juice of the cabbage and put in a container.

pH Level Indicator:  1-2  Deep Red,     3-4  Red,       5-7 Violet

                                8-9 Blue,      10-12 Green,  13 Above Yellow

Red Cabbage contains a chemical from a naturally colored ANTHOCYANIN family of compounds. They are red in acidic solution and blue in basic solution. This is the reason why the extract of the Red Cabbage can be used to indicate acidity or pH of a substance.

Taking it further

1. Try to extract liquid from other plants or flower (for example rose petal) to test acidity of the liquid. Observe if they will have the same result.

2. Try to test acidity  or alkalinity of solutions like salt-water solution or sugar solution.

B -   Pure lemon juice extract

C -   Soda  lemon flavor

D -   Vinegar

E -   Konjac Jelly Juice

F -  Dish Washing Liquid

1.  Pour juice of the red cabbage in an egg container.

2.  Pour a small amount of the liquid you choose in the juice of the red cabbage.

Pure red cabbage extract BEFORE pouring the liquids.

AFTER pouring the liquids.

A - pH 3-4, Acid

B - pH 3-4, Acid

C - pH 5-7, Neutral

D - pH 1-2, Acid

E - pH 10-12,Alkaline

F - pH 8-9, Neutral
